Carrot Halva, also known as Gajar ka Halwa, is a popular Indian dessert made with carrots, milk, sugar, and ghee. Here’s a simple recipe for you:

Ingredients:

  • 2 cups grated carrots
  • 2 cups whole milk
  • 1/2 cup sugar (adjust according to your taste)
  • 1/4 cup ghee (clarified butter)
  • 1/4 cup chopped nuts (almonds, cashews, pistachios)
  • 1/2 teaspoon cardamom powder
  • A pinch of saffron strands (optional)
  • A handful of raisins (optional)

Instructions:

  1. Heat ghee in a heavy-bottomed pan or kadai over medium heat.
  2. Add the grated carrots to the pan and sauté them in ghee until they become soft and the raw smell disappears. This may take about 8-10 minutes.
  3. Once the carrots are cooked, add milk to the pan and stir well. Cook the carrots in milk until the milk reduces and thickens, and the mixture becomes semi-solid in consistency. This may take 20-25 minutes. Keep stirring occasionally to prevent sticking.
  4. Add sugar to the mixture and continue to cook until the sugar dissolves and the halva thickens further. The carrots will absorb the sweetness from the sugar.
  5. Add chopped nuts, cardamom powder, saffron strands (if using), and raisins. Mix well and cook for another 5-7 minutes until the halva reaches a desired consistency.
  6. Once the halva is cooked to your liking, remove it from the heat.
  7. Garnish with additional nuts and serve warm. You can enjoy it as is or with a scoop of vanilla ice cream.
